Graham Cracker Crumbs
Instructions
Mix together graham crackers crumbs, powdered sugar and melted butter. Pat into the bottom of a 9 inch square pan. In a mixing bowl combine eggs, 1/2 cup sugar, cream cheese and vanilla. Beat well and pour on top of the crust and bake 20 minutes at 325 degrees. Cool to room temperature and spread with blueberry topping. Blueberry topping: In a saucepan crush 1/4 blueberries and add .5 cup sugar. Mix in cornstarch, and salt. Gradually add 1 1/4 cups of water, blend well. Cook over low heat until thick. Fold in 1 1/4 cups blueberries and 2 tablespoons lemon juice. Spread over the top of the cooled crust/cheese mix.
