Gumdrop Fruitcake
Discard any black gumdrops; chop remaining gumdrops and mix with walnuts. Sift together flour, cinnamon, salt, and cloves. Measure out 3/4 cup dry ingredients. Add to gumdrop mix and toss to coat. Cream together butter, sugar, and eggs until light and fluffy. Add dry ingredients and applesauce alternately to creamed mixture, mixing after each addition. Dissolve soda in hot water, and stir into batter with vanilla and lemon extract. Stir in gumdrop mixture. Turn batter into 3 loaf pans which have been lined with greased brown paper. Bake at 300 degrees for about 2 hours. |
