Creamy Cauliflower Chowder
Combine onion, garlic, and butter in a 3 quart microwave dish. Microwave 2-3 minutes until onion is tender. Add coarsely chopped cauliflower and stir in 1/2 cup chicken broth. Cover and microwave 11-15 minutes, until cauliflower is tender. Puree in a food processor until smooth. Return to the casserole dish. Stir in remaining broth; cover and microwave 4-7 minutes until mixture boils. Stir in remaining ingredients, except the cheese. Microwave 2-3 minutes until heated through. Stir in cheese and let stand, covered, 3 minutes until cheese melts. |
