Cut cherries into quarters. Cream the cheese and slowly add the pineapple mixing after each addition. Add the cherries and nuts. Place in a freezing tray and freeze until firm. Serve on lettuce leaves while still semi-frozen. Garnish with whole cherries and fresh  mint. For holidays use a round copper mold and decorate like a wreath.
