1.0 of Red Pepper diced
1.0 of Orange Pepper diced
4.0 of Scallions chopped
3.0 of Cloves Garlic chopped
4.0 Cups of Corn Kernels
3.0 of Plum Tomatoes
1.0 of Lime juiced
0.5 Teaspoons of Cumin
1.0 Tablespoons of Cayenne Pepper Sauce
1.0 Teaspoons of Sweet Paprika
Instructions
Heat a large pan over medium heat. Add oil, peppers, scallions, and garlic. Cook 5 minutes, stirring frequently. Add corn to the pan and allow the liquids from the frozen corn to cook out, about 3 minutes. Add tomatoes to the pan and the juice from one lime. Through the lime halves into the pan and allow to cook with salad. Season with cumin, cayenne pepper sauce, salt and pepper.
